COMMUNIQUE T0 0F PACIFIC REGION October 1, 2014 Food Service Modernization As many of you are aware, Pacific Region is changing their food service model and how food is produced for the inmate population. There will be no changes made to any of the institutional meal routines and they will continue to follow their current meal times. We will be going to cook-chill food production. The change will come into effect November 10, 2014. Matsqui Institution will be producing many of the main menu items and they will be distributed to the following institutions Mission, Pacific, Mountain and Kent. Cook-chill is a controlled system of food preparation designed to provide flexibility and standardization. Cook-chill is a food preservation method in which food is prepared, cooked and then chilled in a central kitchen. The food will be prepared at the Matsqui Production Center, chilled and then delivered to the sites to be stored until it needs to be prepared for service. The storage conditions will ensure that the food quality is preserved through the preparation process. Key points: 0 Standardized Menu and Recipes which will, in most cases, accommodate special diet meals. - Finishing kitchens will continue to prepare breakfast, salads, short order cooking when required and some special diets. a Most of the main meal items, soups, sauces and gravies, will be produced at the Matsqui Production Center and shipped directly to institutions. 0 Ensures consistency Nationally According to CSC policy, all the meals served to the inmates must meet appropriate nutrition standards and the menu is reviewed and approved by a registered dietitian. Furthermore, all standards are supported by Canada's Food Guide. The purpose of this communique is to provide an overview of these changes: Section 6 - Food and Accommodation will normally be charged at a rate of 22% for pay levels through A. Section 7 - All other forms of income (is. pension) will normally be charged at a rate of 30%. Further, there is no policy requirement to provide these trays so we cannot justify their continuation. This also corresponds with the recent communiqu? on the new food services delivery model that is expected to roll out on November Financial pressures and policy requirements under that model will also preclude the issuing of ?night trays? to the population.
